Research on sustainable gummies production presented at the 9th Symposium on Food Production and Processing in a Sustainable Environment

Marisa Gaspar and Ana Cristina Rodrigues, researchers at ciTechCare, Solange Castanheira, research fellow, and Miguel Colaço, an undergraduate Biotechnology intern, attended the 9th Symposium on Food Production and Processing in a Sustainable Environment, held on 16 June at the School of Tourism and Maritime Technology (ESTM) of the Polytechnic of Leiria, in Peniche.

Solange Castanheira presented the poster entitled “Sustainable Gummies from ‘Rocha’ Pear Residues: Consumer Perception Using Electroencephalography-Supported Sensory Analysis”, co-authored by Rafael Pinheiro, Miguel Colaço, Ana Cristina Rodrigues, Maria Guarino, and Marisa Gaspar. The researh work explores the valorization of Rocha pear by-products through the development of sustainable gummy formulations and the assessment of consumer perception using sensory analysis supported by electroencephalography (EEG). The study contributes to promoting the principles of the circular economy and innovative approaches to food product development.

The symposium provided an opportunity to disseminate several research projects developed at ciTechCare in the field of Nutrition and Food Innovation, while also fostering interaction with researchers from other institutions, fostering future collaborations.
